Rogues London Take Up Residency At Hackney Coffee Company
CHEF DUO ROGUES LONDON, ZAC WHITTLE AND FREDDIE SHEEN, WILL TAKE OVER FOR THREE MONTHS IN THE VENUE’S FIRST LONG TERM RESIDENCY
Chef duo Rogues London, Zac Whittle and Freddie Sheen, have taken over Hackney Coffee Company for three months in the venue’s first long term residency. The partnership launched on 12th November, offering sharing plates and tasting menus on weekday evenings and a five-course brunch with drinks pairing on the weekends. The food focuses on highlighting the quality produce they receive from suppliers, changing weekly to accommodate what is delivered to them.
Rogues’ menus challenge the tradition of holding meat at the centre of fine dining plates, their approach revolves around ensuring the menu is sustainable, first and foremost. They endeavour to use every part of what they are delivered, to ensure nothing is wasted. The duo take their supply chain very seriously, heading to New Covent Garden Market each week to source their own fruit and veg and championing smaller producers such as Lavington Lamb and Gigha Halibut.
This approach is evident in the multi-course menus which feature meat and fish dishes alongside those hero-ing brilliant British vegetables. Stand out example dishes include Roasted corn, red miso & mushroom tart, Roast Harlequin pumpkin, parmesan, sage and chestnut and Sea trout, Alsace bacon, spring vegetables & girolles. Each menu can be made suitable to vegetarians and pescetarians.
Rogues is the brainchild of two chefs, Freddie Sheen and Zac Whittle, who met at the classic Galvin brothers establishment, Galvin La Chapelle. After working alongside each other for a year, the chefs recognised similarities in their styles and a desire to branch off into a different concept together. They began hosting pop-ups on the side and pretty quickly decided it was the direction they wanted to head in. In January 2020, Rogues was born as a pop-up restaurant concept.
Rogues’ most recent pop-ups have been at Parlour in Kensal Rise and Wells Street Kitchen in Hackney, the evenings were consistently sold-out through the summer and they have gained a loyal customer base during the this period thanks also to their time in lockdown as a delivery service, providing the local area with homemade items and excellent produce.
Hackney Coffee Company is known for hosting interesting and eclectic events in its leafy green back room. The space, with its vaulted ceiling of bright skylights, filled with a plethora of plant life is popular with locals for its excellent, ethically sourced coffee. Their offering also includes private events, cocktail making masterclasses and after parties.
